Turkey Taco Salad |
Tonight it was Mexican for dinner. Hello turkey taco salad (for me) and turkey soft tacos (for Chris), thanks for making my tummy all nice and warm inside…you were delicious!
So, I have four jalapeno plants in my pot, and the jalapenos are coming out the whazoo!! I can’t use them fast enough. Thank goodness I was able to give about 5 of them to a friend tonight, use 5 of them for my tacos, and still have left overs plus what’s on my plants. I’ve been thinking about what I can make with these little guys, and have come up with a couple of ideas (which I will share with you later). But one off the wall, crazy idea was what about a jalapeno ice cream….would this be good? Not sure, and I haven’t been brave enough to attempt just yet. Trying to come up with some sort of spice or sweetness to create some sort of piece of heaven.
Until then, I decided to make homemade guacamole to go with my delicious turkey taco salad. It’s Holy because it is a little bit of heaven in your mouth…yep that’s what I said, Heaven! My husband loves guacamole!! Oh and by the way, guacamole is pronounced waca-mol-ay, not guac-a-mol-e (a friend of mine who is Mexican told me so, so it must be true!). Also, my taco seasoning is straight from my pantry, yep, you can make your own taco seasoning. It’s a cinch and you probably have all the spices in your own pantry, which in turn, might just save you some money.
This guacamole recipe is simple and easy to make; the only time consuming part of this recipe is the chopping. Put the avocado seeds in the guacamole to help prevent it from turning brown.
Note this guacamole is great served on top of some seasoned, grilled chicken or steak. So if you run out of chips or tired of eating chips with the guacamole, eat it with the chicken.
By the way, this is a great tailgating dip…football season, aka tailgating parties, are right around the corner. I’m super pumped…Go DAWGS! And Roll Tide Roll!! I hope to share with you some great tailgating food ideas in later posts.

Holy Guacamole:
- 4 Ripe Avocados
- 1-2 Plum Tomatoes, cored and seeded (use as many tomatoes as you like)
- 1/4 cup onion, chopped
- 3-4 jalapenos, cored and seeded (to taste)
- 2 Tbsp Lime Juice
- 1/8 cup cilantro, chopped (to taste, add as much as you like, I like more than this)
- Garlic salt (to taste)
- Spoon out pitted avocado from skin, use fork and spoon to chop/mix avocados together. Add remaining ingredients and mix together well. You can determine how creamy or chunky you want the guacamole by how much you “stir” together the ingredients.

Taco Seasoning:
Prep Time: 5 minutes
3 tablespoons + 1 teaspoon paprika
3 tablespoons cumin
1 tablespoon + 2 teaspoons onion powder
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
