I made this recipe about a month ago, but just haven’t gotten around to sharing it with you. We have been on the go pretty much all summer, so I haven’t been posting that much.
We have also been trying to eat healthier (which has been very hard since we’ve been traveling off and on so frequently). I think I might’ve gained a couple of pounds from the bad food and not working out as much. Oh well, just gotta get back on the healthy train. Which I’m trying to do this month, but it’s looking more like August for me. But the hubs should be good, since he’s not traveling anymore this summer (that I know of that is). I’m going to be in and out of town until the beginning of August.
The hubs loves swordfish; I believe it’s his favorite type of fish (mine’s grouper or mahi). He often will request fish for dinner, and we usually eat halibut, but this time, he had asked to have fish with a mango salsa. Yes, you read correctly, the hubs asked for mango salsa. Who knew? I knew he would eat mango salsa at a restaurant on fish, but he’d never really requested it from me (not even sure he likes mangos by themselves—me on the other hand, I love mangos). So, I figured if I was going to have mango salsa, I’d go all out and see if Whole Foods had swordfish steaks to purchase. They did! Originally I was going to make this a little easier on myself, by purchasing Whole Food’s pre-made mango salsa, but they were out. Looks I had to make it myself, which I’m so glad I did. It was easy to make and super yummy. This salsa recipe is hubs approved!! We both loved it so much, and it’s great with corn chips!
I also purchased some Caribbean jerk marinade from Whole Foods and let the steaks marinade in it. I wish I could remember the brand because it was so tasty. It was a southern female name if that helps. I grilled the Swordfish on our grill pan at home (too hot to grill outside in this heat and humidity). I marinaded the steaks for about 15-20 minutes. Placed them on my grill pan, and cooked for 5-8 minutes.
So while I’m sitting at the airport and on a plane today wishing there was something healthier for me to eat, I hope you enjoy this delicious and healthy dinner recipe. I will be sharing the rice recipe with you in the next post. So for now, here is this tasty swordfish steak and mango salsa.
- 1-1/2 cups chopped, peeled mango
- 1/2 cup chopped red or green sweet pepper
- 1/4 cup thinly sliced green onions (approx 2)
- 1/4 cup snipped fresh cilantro
- 2 Tbsp lime juice
- 1-2 fresh jalapeños or serrano peppers, seeded and finely chopped
- In a medium mixing bowl stir together all ingredients. Cover and chill at least 2 hours before serving.
