Wow, oh wow! I’m back and it has been a while. Taking a couple of weeks on hiatus from my personal blog has been great but sad because I’ve missed you!!
Today I’m posting my monthly Secret Recipe Club post. Stop by their website to join and get great recipes!! This month I was assigned blogger, Evelyne Budkewitsch, food blog, Cheap Ethnic Eatz. You have to checkout her blog! It’s fabulous. Evelyne is in Montreal, Canada, and I’m so jealous because she lives in a foodie city!! Cola doesn’t really have a foodie scene and the restaurant options are few and far between. Don’t get me wrong we do have some great restaurants, but not many. Anyway, Evelyne’s blog features delicious sounding and looking recipes and as her blog name says, Ethnic’ food is a main focus. There are so many recipes I look forward to making;to name a few: One Armed Tom Yam Wonton Soup, Greek Moussaka, Truffled Tomato Tarte Tartin, etc.
But today I’m sharing with you a Blueberry Upside Down Cake. I’ve never heard of blueberry upside down cake before, but it sounded so damn good. Blueberries are in season right now, and I had just bought some fresh this past week at the grocery store, so it was a no brainier. First off this recipe is super simple and easy to make! Second, the batter was delicious, and my thought is if the batter is good then the actual cake will be good. When I tasted the batter I thought this would be good as an ice cream. Look out, might try to put this in an ice cream recipe!!
The cake was beautiful as well as delicious! And when I say delicious, I mean DELICIOUS!! Oh my, it was heaven! I absolutely loved it, and it is hubs approved! We can’t eat it all by ourselves, so it’s being sent over to a couple of friends for them to chow down on, and I know that they will love, love, love it! So try this recipe, you won’t be disappointed!!! And your friends will love you for it!
Blueberry Upside Down Cake:
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 2 cups blueberries (fresh or Frozen)
- 1 tablespoon lemon juice
- 1/2 cup butter
- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 3/4 cup milk
In 9 inch square cake pan, combine melted butter and brown sugar; spread evenly on bottom. Spread blueberries evenly over top. Sprinkle with lemon juice.
Cream butter; gradually add sugar, beating until light. Beat in egg and vanilla. Sift or mix together flour, baking powder, salt and cinnamon if using. Add dry ingredients alternately with milk to creamed mixture. Spread batter evenly over blueberry layer.
Bake in 350°F oven for 45 to 50 minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes in pan, then turn out on to large flat plate.
